5 (South indian foods : Episode 5)

(South Indian Foods : Episode 5)

(Beverages)

(Vada / wada / vade / vadai)

(Vada / wada / vade / vadai)

Vada also known as wada or vade or vadai is a savoury fritter-type snack from South India.

Vada is a traditional South Indian food known from antiquity. Although they are commonly prepared at home, vadas are as well a typical street food in the Indian Subcontinent and Sri Lanka. They are usually a morning food, but in street stalls and in railway stations, as well as inside the Indian Railways, they are available as a snack all through the day.

Vada can vary in shape and size, but are usually either doughnut- or disc-shaped and are about between 5 and 8 cm across. They are made from dal, lentil, gram flour or potato.

The South Indian food primarily contains rice as a staple food, with the use of spices, pulses, chillies, coconut and indigenous fruits and vegetables like tamarind, bananas, bitter gourd, ginger, garlic, onions, tomatoes, etc.

South Indian Food is generally classified into six catergories of taste - sweet, sour, salt, bitter, pungent and astringent and South Indian Recipes recommend that you include all of these six tastes in each main meal you eat. Each taste has a balancing ability and including some of each provides complete nutrition, minimizes cravings and balances the appetite and digestion.

Sweet (Milk, butter, sweet cream, wheat, ghee (clarified butter), rice, honey)
Sour (Limes and lemons, citrus fruits, yogurt, mango, tamarind)
Salty (Salt or pickles)
Bitter (Bitter gourd, greens of many kinds, turmeric, fenugreek)
Pungent (Chili peppers, ginger, black pepper, clove, mustard)
Astringent (Beans, lentils, turmeric, vegetables like cauliflower and cabbage, cilantro)

Puri Set (ปุริ เซ็ท)

Masala Dosa (มาซาล่า โดซะ)

Vada and Idli (วาดะ และ อิดลี่)

Tomato Rice (ข้าวผัดมะเขือเทศ)

South Indian cuisine is distinguished by a greater emphasis on rice as the staple grain, the ubiquity of sambar and rasam (also called chaaru/saaru and rasam), a variety of pickles, and the liberal use of coconut and particularly coconut oil and curry leaves. Curries called Kozhambu are also popular and are typically vegetable stews cooked with spices, tamarind and other ingredients. The dosa, poori, idli, vada, bonda and bajji are typical South Indian favorites. These are generally consumed as part of breakfast. Other popular dishes include Kesaribath, Upma/Uppittu, Bisibele Bath, Rice Bath, Tomato Bath, Pongal, Poori & Saagu, Pulao, Puliyogarai and Thengai Sadham. Hyderabadi biryani, a popular type of biryani, reflects the diversity of south Indian cuisine. South Indian cuisine obtains its distinct flavours by the use of tamarind, coconut, lentils, and a variety of vegetables.Udupi cuisine is a popular cuisine of South India.

In southern India, the usual lunch service includes soup as an appetizer; a little rice with plain dhaal curry and ghee; rice mixed with a lean but spicy vegetarian gravy or a chicken, mutton, or seafood gravy; rice mixed with rasam; rice with curd (yoghurt); finally, fruit and betel leaves or nuts (beeda). Pappadams and pickles are served throughout.

Their rice preparations are also masterpieces like the biryani from Hyderabad, lemon rice and rice seasoned with coconut peanuts, tamarind, chilies, curry leaves, urad dal and fenugreek seedsSouth Indian chutneys are made of tamarind, coconut, peanuts, dal, fenugreek seeds, and cilantro. Meals are followed by coffee. South Indian dals and curries are more soupy than North Indian dals and curries. South Indian cuisine is also hotter.

Coconut milk straight from the nut is a common beverage in South India. Coffee is very popular in South India and Madras coffee is popular in South Indian restaurants throughout the world.

The South Indian food is a brilliant blend of flavors, colors, seasoning, nutritional balance, fragrance, taste, and visual appeal.

Andhra, Chettinad, Tamil, Hyderabadi, Mangalorean, and Kerala cuisines each have distinct tastes and methods of cooking. Some popular dishes include biryani, ghee rice with meat curry, seafood (prawns, mussels, and mackerel), and paper-thin pathiris from the Malabar area.

While masala tea (left) is a staple beverage across majority of India, Indian filter coffee (right) is especially popular in southern India
